  1. For the Rib Rub

    After cleaning the ribs and removing the membrane from the backside of the racks, combine all the rub ingredients in a medium bowl. 

    Place the ribs on a foil or parchment-lined baking sheet. Be sure to line the pan or cleaning will be a nightmare due to the long cooking time. 

    Cover the ribs on both sides with the rub. You can put the rub on the ribs up to two days in advance of cooking or as little as soon as right before. 

  1. To Cook:

    Season the ribs with the dry rub on both sides. Cover the pan with foil so that it seals tightly. Place the ribs into a preheated oven at 350F. 

    Cook for 3-3 1/2 hours covered. Remove the cover for the final 30 minutes to get a crispy exterior. 

    If you want to add barbeque sauce, do so in the last 30 minutes.
