To a slow cooker add beef and onions. In a separate bowl mix together the water, tomato sauce and all the spices except the bay leaf. Pour the mixture over the meat and onions in the slow cooker. Add the bay leaf. Cook on low for 6-8 hours or High for 4-5 hours. The beef should easily pull or fall apart once it is properly cooked.
- For faster cooking and easier shredding, cube the beef roast into 2-inch pieces before slow cooking.

I have successfully doubled this recipe. The cooking time is about 6-8 hours on High if using 5+ pounds of meat.
Mexican shredded beef can be portioned and frozen in freezer bags for easy weeknight meals.
