Description

Buttery, soft, chewy, and loaded with your favorite add-ins, these cookie bars are packed with flavor, and they are the perfect easy treat when you need a dessert in a pinch.

  1. Preheat oven to 350F and line a 9X13 pan with parchment paper. *A 10x14 metal baking pan may also be used.

  2. Combine melted butter and sugar in a large bowl and stir well.

    (1 cup unsalted butter,1 ¼ cup brown sugar, ½ cup granulated sugar)

  3. Add eggs, egg yolk, and vanilla extract and stir until completely combined. Set aside.

    (2 large eggs + 1 egg yolk, 2 teaspoons vanilla extract)

  4. In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.

    (2 ¼ cups all-purpose flour, 2 teaspoons cornstarch,½ teaspoon baking powder, 1 teaspoon salt)

  5. Gradually stir dry ingredients into wet until completely combined.

  6. Fold in white chocolate chips and strawberries, if using.

    (1 cup white chocolate chips, 1 cup freeze-dried strawberries)

  7. Spread blondie batter into prepared pan and transfer to oven.

  8. Bake at 350F for 25-30 minutes or until a toothpick inserted in the center comes out clean or with a few fudgy crumbs.

  9. Allow to cool before cutting and enjoying.

Note

  • I prefer a mix of dark and light brown sugar, but you can use all light or all dark. All dark brown sugar will create a richer, sweeter, and more moist blondie.
  • If you don't have parchment paper you can lightly grease and flour the sides and bottom of your pan instead. 
  • When using a glass pan, it may take slightly longer than the posted baking time.
  • Suggested mix-ins include: chocolate chips, butterscotch chips, peanut butter chips, walnuts or other chopped nuts. Use the same amounts posted for the ingredients above.
