Pecan Butterscotch Cookies

  1. In a bowl, stir together pancake mix, pudding mix, butter, and egg, and then stir in the pecans. Roll into 1-1/2 inch balls. Place them about 2 in. apart on a greased baking sheet. Flatten with the bottom of a glass. Bake at 350 degrees for 8-10 minutes. Don't overbake. Yield: About 1-1/2 Dozen
