Description

These savory meatballs work perfectly for meal-prepping ahead and storing in the freezer. Of course, you can also make them and bake them up fresh in a sweet and sour sauce to be served over rice with steamed veggies. Enjoy!

Sweet & Sour Sauce

Instructions

  1. Place breadcrumbs or bread slices and milk in a large mixing bowl and soak for 30 minutes. Add ground meat and gently mix. Add remaining ingredients and mix together until well combined. (be careful not to over mix.) 

    Roll small balls (about 2 teaspoons) with the meat mixture and place onto a baking sheet ½ inch apart. Bake meatballs for 18 to 20 minutes or until they’re completely cooked through.

    *If you're preparing the meatballs ahead for freezer meal prep, freeze the meatballs on a baking sheet after rolling them. After about 2 hours, store the meatballs in a gallon freezer storage bag. Optionally, you can store and freeze the meatballs in the glass baking dish that you'll use to bake in later. 

  1. For the Sweet & Sour Sauce

    Add all the sauce ingredients to a small sauce pan. Heat on medium-low heat until the sauce begins to simmer. It will thicken as it bubbles. Once the sauce is thick enough to coat the back of a spoon, turn off the heat. 

    Once the meatballs are baked through in the oven, drain off some fat from the baking dish. Add the sweet and sour sauce and return the pan to the oven to cook for 10-15 more minutes until the sauce is bubbly and the tops of the meatballs are browned. 

    Serve over rice or veggies.
