Preheat oven to 325°F. Line a large sheet pan with aluminum foil and spray generously with cooking spray.

Combine all ingredients except pecans in a medium microwave-safe bowl. Stir well.

Add the pecans to the bowl and microwave on high for 1 minute. The heat will thin the maple mixture for better coating. Remove and stir continuously for 1 full minute to ensure the syrup thoroughly coats every pecan.

Turn pecans out onto the prepared sheet pan, making sure to scrape out all of the maple syrup mixture as well. Carefully spread out pecans to a single layer on the pan.

Place the pan in the oven and bake for 10 minutes. Pull the pan out, stir the pecans thoroughly, and spread them back into a single layer. Continue baking for 8 to 12 minutes more, paying close attention until they reach a rich, deep golden-brown color. Caution: Pecans can go from perfectly done to burnt very fast, so stay near the oven!

Stir again after removing from the oven, then spread out to a single layer to cool on the pan. Cool completely (about 30 minutes) before storing in an airtight container.
